Crack hard-boiled eggs, trying not to break the egg.
Cut each egg in half.
Empty the egg yolks into mixing bowl.
- Add mayo, pimentos, cheese and salt and pepper and mix well. (May add mayo for desired creaminess).
Spoon a dollop of yolk mixture into each empty egg. Chill for 5 minutes, or overnight, covered. Serve chilled.
