- In a pot with a tight fitting lid, combine rice, chicken broth and all purpose seasoning. Bring to a low boil and stir. over with lid, reduce heat to low. Simmer for 20 minutes or according to package directions. Do not stir or remove lid while cooking
- Chop onion and bell peppers into small diced pieces and set aside.
When rice is done, heat garlic and oil over medium heat in a large skillet. Add onions and peppers to the oil, stir, and saute for 1 - 10 minutes until vegetables start to soften.
- Stir in crushed pineapple, soy sauce, ginger and pepper. Reduce heat to a simmer. Add rice, combine well.
Heat through, about 5 minutes. Top with chopped cilantro and serve.
