- Roll out small circles of dough to about 1/4-inch thickness. Spoon a small amount of cooked sausage onto the dough, centered and towards the front. Sprinkle a little of shredded cheese over the sausage.
- Brush the edges of the dough with the egg wash. Fold the dough over and press down with your fingers or a floured fork. Trim excess edges if needed with a small pastry or pizza cutter.
- Place pizza pockets on a half sheet pan lined with parchment paper. Brush with egg wash and bake in a preheated 425 degree oven for about 12 minutes, or until golden brown. Serve immediately with warm marinara sauce.
