Pizza Pot Pie

Makes 3 pizza pot pies
When the beloved taste of pizza meets the homespun goodness of a pot pie, great things happen.



  1. In a bowl, combine the cheddar cheese and cream cheese. Add the mozzarella cheese and combine.
  2. In a separate bowl, combine the pizza sauce, salt, pepper, oregano, basil, and onion. Mix well.
  3. Add the bell pepper and mix.
  4. Roll out a piece of refrigerated piecrust and cut circles that are ½ to 1 inch larger than the diameter of your ramekins. These will be the tops of the pizzas. Set these aside.
  5. Take the scraps of dough and place them in the bottom of each ramekin.
  6. Add the sauce/veggie mixture to each ramekin.
  7. Add your choice of toppings, such as tomatoes...
  8. or pepperoni. Then spoon the cheese mixture into each ramekin.
  9. Top each ramekin with a circle of piecrust, pressing along the edge to form a seal.
  10. Cut an X in the top of each crust to release the steam.
  11. Sprinkle with Parmesan cheese. Bake in a 350 degree oven for 30 minutes.
  12. Top with a fresh basil leaf and serve.
