- Preheat oven to 400°F.
- Grease a jelly-roll pan with canola oil, and top with tortillas. Spread 3 tablespoons of the mozzarella cheese over each tortilla. Arrange the pepperoni slices among tortillas. Top each with 3 tablespoons cheese.
- Bake the tortillas at 400°F for 5 minutes. Remove from oven, and gently fold each tortilla in half. Place back in the oven for an additional 10 minutes or until browned and crisp, flipping halfway through. Serve with marinara sauce.
