- Place the pork in a 6 quart slow cooker. Add the water. Cover and cook on high for 4 hours, or on low for 8 hours, until the meat is tender. Shred the pork into bite-sized pieces using forks.
- Heat the butter in a large nonstick skillet over medium-high heat. Stir in the eggs and scramble, stirring constantly until just set, about 30 seconds. Season with the salt and pepper. Remove from the heat.
- Top each tortilla with the pulled pork, scrambled eggs, cheddar, salsa and cilantro. Serve and enjoy.
Recipe Tip: Make the pulled pork a day ahead! Simply cook the pork and refrigerate until ready to use. Reheat the pork in a large skillet over medium heat until fully heated through. Serve and enjoy!
