Pork Chops with Warm Lemon Vinaigrette

For an elegant dinner that only takes 20 minutes to make, impress your family with these tender pork chops and fresh greens drizzled in a warm lemon vinaigrette sauce.

- Preheat a large cast iron skillet over medium to high heat. Add 1 tablespoon of olive oil and 1 tablespoon of butter to the pan.
- Dry off the pork chops with paper towels. Season both sides of the pork chops with brown sugar, onion powder, garlic powder, salt, and black pepper. Use your fingers to gently rub in the spices.
- Cook the pork chops on medium to high heat for about 5 minutes each side. Use tongs to turn. Once browned and cooked thoroughly, remove from the pan and place on a plate to rest.
- Add the minced garlic and lemon slices to the hot pan and cook over medium heat. Turn the lemon slices so they brown evenly. Be sure and stir with a wooden spoon the garlic so it does not burn. Add 2 tablespoons of cold butter, so you create a sauce. Turn the heat off.
- Serve the pork chops with baby mixed greens or arugula. Spoon the sauce over the pork and fresh greens. Season with additional salt and pepper if desired.
