Pork Medallions & Mushrooms

Pork filet is versatile and a great alternative to beef filets. Try this awesome dish made from Smithfield® Garlic & Herb Seasoned Pork Loin Filet. One pan is all that's required for this deliciousness.


    Select ingredients:


  1. Heat 1 tablespoon butter in large nonstick skillet over medium-high heat until butter begins to lightly brown. Sauté mushrooms and onions for 10 minutes or until vegetables begin to brown, stirring occasionally. Set aside in a bowl.
  2. Using the same pan, heat 1 tablespoon butter until melted and beginning to brown. Add pork slices.
  3. Cook 5 to 6 minutes on each side until internal temperature reaches 150°F. Set aside.
  4. Place remaining pork “medallions” on serving platter. Return mushrooms, any accumulated juices and remaining 1 tablespoon of butter to skillet; cook 1 to 2 minutes or until mushrooms are glazed. Season with salt and pepper to taste. Spoon mushroom sauce over pork and sprinkle with parsley.
