- Heat the oil in a large skillet over medium heat. Add the sausage and onion. Cook, stirring occasionally, for about 5 minutes or until the chorizo is lightly browned and the onion is tender.
Stir in the chicken broth and potato. When the liquid returns to a boil, reduce the heat to medium. Cover and cook for 3 minutes.
- Stir in the kale and beans. Continue to cook for about 5 minutes, or until the potatoes are tender and the kale is wilted. Season to taste with pepper and salt.
- Serve the sausage and vegetables in bowls with the cooking broth.
