For ease of preparation, purchase smoked chorizo sausage, which is made with pork (and sometimes beef) flavored with chili pepper, red pepper, oregano, cumin and other spices. This humble dish is very easy to prepare and sure to please.

  1. Heat the oil in a large skillet over medium heat. Add the sausage and onion. Cook, stirring occasionally, for about 5 minutes or until the chorizo is lightly browned and the onion is tender.
  2. Stir in the chicken broth and potato. When the liquid returns to a boil, reduce the heat to medium. Cover and cook for 3 minutes.
  3. Stir in the kale and beans. Continue to cook for about 5 minutes, or until the potatoes are tender and the kale is wilted. Season to taste with pepper and salt.
  4. Serve the sausage and vegetables in bowls with the cooking broth.
