- Preheat oven to 425 degrees.
- Slice your potatoes and onion using a spiralizer. If you don't have a spiralizer you can shred them using a grater. Put aside in a large bowl.
- Add eggs, salt and pepper to a small bowl and mix well. Add olive oil. Mix.
- Pour egg mixture over potatoes and onions and coat vegetables.
- Pour into pie dish and bake for 1 hour.
