Apples and sweet potatoes are iconic autumn fruits and vegetables. In this pressure cooker breakfast recipe, you can enjoy these two fall produce items together in each spoonful of hearty oatmeal. And since it’s made in a pressure cooker, this morning dish is quick to make, taking less than 20 minutes to prep and cook. That’s it! And for a final (and tasty) touch, top each portion with fresh chopped apples, pecans, dried cranberries and a dollop of Greek yogurt.

- Add the oats, milk, water, sweet potatoes, brown sugar, vanilla, cinnamon and salt to the Instant Pot and mix to combine.
- Lock the lid in place. Select MANUAL and set the timer for 3 minutes.
- Once complete, allow the Instant Pot to sit for 10 minutes (natural pressure release). Press the pressure valve to release any remaining pressure.
- Serve the oatmeal topped with the Greek yogurt, apples, pecans and cranberries.
Recipe Tip: Make the cauliflower mixture and refrigerate it covered in the baking dish for up to one day in advance. Bake for 25-30 minutes, or until the cheese is melted and the filling is hot and bubbly. Garnish as directed.
