A simply seasoned roast with a tart creamy sauce.
- Season roast liberally with salt and pepper. Adjust oven rack to middle position and preheat to 350 degrees. Place roast on a rack in a roasting pan and roast until desired doneness,about 1 hour for medium.
- Mix together horseradish and sour cream and season to taste with salt and pepper, add chives if using. Allow roast to rest for 15 minutes then slice thinly and serve with horseradish sauce.
