Don’t let the name of this recipe fool you! These Protein-Packed Key Lime Pie Parfaits are perfect for breakfast, brunch or an afternoon snack. After all, they’re crafted with key lime-flavored Greek yogurt, graham crackers, a little honey, coconut, lime, cinnamon and whipping topping. Although these parfaits only take about 20 minutes to make, if you are really pressed for time in the morning, feel free to make them the night before. Just hold off on the whipped topping and add that right before eating!

Toast coconut in a small, dry skillet set over medium heat for 5 to 7 minutes, tossing frequently, until coconut turns light, golden brown. Remove from heat and set aside.

Empty graham crackers into a large plastic bag and use a rolling pin to crush them into crumbles.

Spoon a layer of graham crackers into the bottom of a parfait or tall dessert glass. Drizzle with honey. Add a layer of yogurt and repeat 2 to 3 times or until glass is filled.

Garnish with toasted coconut, lime zest, whipped topping, and a sprinkle of cinnamon.
