- In a large casserole dish or roasting pan, place the chicken breasts and drizzle with olive oil until coated, salt, and pepper. Bake in a 350-degree oven for 45 minutes or until the internal temperature of the chicken reads 160 degrees Fahrenheit.
Remove from the oven, let the chicken cool for approximately 10 to 15 minutes and then use two forks to shred the chicken. Leave the pulled chicken in the casserole dish.
While the chicken is cooking, sauté the onions in the butter in a skillet until the onions are softened and browned.
In a large bowl, combine the onion powder, garlic powder, salt, pepper, paprika, and brown sugar.
Add the ketchup and barbecue sauce and stir.
Add the sautéed onions and stir.
Pour the sauce onto the pulled chicken in the casserole dish; toss.
Return the casserole dish to the oven for an additional 20 to 30 minutes until hot.
Serve on large rolls or buns if desired.
