- Place graham cracker squares on a half sheet pan lined with parchment paper.
- Scoop leftover pumpkin pie filling onto graham crackers. Top with a scoop of softened vanilla ice cream and then press another graham cracker square on top.
- Freeze for about an hour, or until firm. Enjoy once firm, the same day.
