Warming, filling and creamy are all words to describe this flavorful, fall soup. Serve it at Thanksgiving as a nontraditional side that will easily delight your company.
- In a large pot over high heat, mix stock, salt, pumpkin, onion, garlic and pepper. Heat until the soup begins to boil and then bring heat down to low and let soup simmer for 30 minutes without a lid.
- Once the soup has simmered for 30 minutes place it into a large blender and blend until well mixed.
- Pour the soup back into the pot and simmer for an additional 30 minutes. Right before you are ready to serve, stir in the heavy cream.
