Quinoa and Black Bean Veggie Burgers

Who says burgers need to be all beef? These flavorful patties pack a protein punch by combining healthy black beans with quinoa. Plus, the patties can be frozen and stored for up to six months!

- Cook quinoa according to package directions, set aside to cool.

In a blender or food processor, blend half of the black beans and oats until smooth. Add up to two tablespoons of water if mixture is crumbly.

In a large bowl, combine pureed mixture with remaining beans, quinoa, celery, corn, egg, ketchup, and spices and mix well. Refrigerate for 1 hour.

Preheat oven to 375 degrees. Form chilled bean mixture into 6 patties and arrange on a well-greased baking sheet.
- Bake for 20 minutes, turning once after 10 minutes.
- Serve warm on hamburger buns with tomatoes, lettuce, and cheese if desired.
