When it comes to breakfast, we don’t always have a lot of time in the morning to prepare an elaborate meal. That’s when a quick breakfast or snack can really come in handy; something like these Raspberry Yogurt Parfaits. With Greek yogurt, fresh raspberries, crunchy granola and almonds and sweet chocolate, this simple meal is filling, packed with protein and full of flavor in every spoonful. Plus, you can prep these the night before to save even more time in the morning and also allow your kiddos to grab one from the refrigerator whenever they’re ready.
- Smash 1 1/2 cups of raspberries in a large bowl with a fork until smooth. Add the yogurt and swirl together with a butter knife. Place 1/2 cup of the yogurt mixture in each parfait glass or jar. Layer with the remaining raspberries, granola, chocolate chips and almonds. Repeat 2 to 3 times until the parfait glasses are full.
- Cover and refrigerate until ready to enjoy.
