Looking to add some more vegetables to your diet? Try our favorite Ratatouille recipe tonight and even the pickiest eater will enjoy their veggies!


Select ingredients:


  1. Begin by frying sausage on stovetop. When fully cooked, let rest for 5 minutes and then cut into slices. Cut vegetables up into small cubes and/or slices.
  2. Puree tomatoes(do not drain), then put in large pot or dutch oven along with vegetables, garlic, and sausage slices. Add salt and pepper to taste.
  3. Cover. Slow simmer for an hour, stirring occasionally.
  4. Ratatouille is ready when vegetables have softened. Top with fresh basil and serve with a crusty bread or tortellini for a hearty meal.
