- Begin by frying sausage on stovetop. When fully cooked, let rest for 5 minutes and then cut into slices. Cut vegetables up into small cubes and/or slices.
- Puree tomatoes(do not drain), then put in large pot or dutch oven along with vegetables, garlic, and sausage slices. Add salt and pepper to taste.
- Cover. Slow simmer for an hour, stirring occasionally.
- Ratatouille is ready when vegetables have softened. Top with fresh basil and serve with a crusty bread or tortellini for a hearty meal.
