Red Hot Cornbread

A southern comfort with a bit of a kick!

  1. Preheat oven to 400 degrees with a 9” cast iron skillet inside on the middle rack.
  2. Combined cornmeal, flour, baking soda and salt. Mix well.
  3. Combine egg, milk, 1 tablespoon oil, pepper and salsa. Mix well.
  4. Combine ingredients from steps 2 and 3.
  5. Divide cheese into three equal parts and put first part into mixture. Repeat with second and third parts of cheese.
  6. Remove from oven and oil generously with remaining canola oil. Be sure to go up the sides.
  7. Spread the batter evenly in the skillet.
  8. Bake for 15-20 minutes. Remove from skillet and serve with butter, if desired.
