- In an electric blender of a food processor, puree the chickpeas, red peppers, lemon juice, tahini, garlic, cumin, cayenne, and salt.
- Process, using long pulses, until the mixture is smooth and slightly fluffy. Transfer to a serving bowl and refrigerate for a minimum of 1 hour. Let it return to room temperature before serving. Garnish with chopped parsley if desired.
