Whoopie pies or "gobs" as they are known in the north, are a soft "cake" like outside with a creamy icing center. Delicious, soft, creamy...whoopie pies are a fantastic treat for any occasion!

Select ingredients:

  1. In a large bowl, mix the first three ingredients. Using a cookie scooper, scoop the batter into balls and place on a cookie sheet lined with parchment paper. Space the dough out about 1 inch apart.
  2. Bake for 10-12 minutes at 350.
  3. In another bowl, whip the cream cheese, butter, powdered sugar and vanilla until creamy smooth.
  4. Once the outside cake cookie is cooled, smear about 1 tablespoon of icing on the top of one cookie and cover with another to make the "pie".
