Light and refreshing rice noodle salad delicious with either grilled shrimp or steak.
Ingredients
Directions
- Dressing
- Mix all ingredients together and set aside until ready to serve.
- For Salad
- Soak rice noodles in hot water until they are soft and ready to eat, around 10 minutes.
- Rinse in cold water, drain and set aside.
- Finely slice carrots and cucumber; a mandolin would be helpful but not necessary.
- Setting aside, romaine and cabbage mix all ingredients in bowl.
- When serving, mix dressing into noodles, salt and pepper to taste.
- Serve on a bed of romaine and cabbage.
- Top with excess herbs and peanuts.
