Light and refreshing rice noodle salad delicious with either grilled shrimp or steak.

Directions

  1. Dressing
  2. Mix all ingredients together and set aside until ready to serve.
  3. For Salad
  4. Soak rice noodles in hot water until they are soft and ready to eat, around 10 minutes.
  5. Rinse in cold water, drain and set aside.
  6. Finely slice carrots and cucumber; a mandolin would be helpful but not necessary.
  7. Setting aside, romaine and cabbage mix all ingredients in bowl.
  8. When serving, mix dressing into noodles, salt and pepper to taste.
  9. Serve on a bed of romaine and cabbage.
  10. Top with excess herbs and peanuts.
