A meal in a rice cooker is a great vegetarian option when you need something easy to fix and want to share a healthy treat with your family. You can up the protein content by adding a few cubes of firm tofu. Or, to turn it into a dish the meat lovers in your house will enjoy, just add a few cubes of chicken or steak. The sauce is what makes this dish so savory, so be sure to make enough for leftovers. For extra fun, enjoy this meal with chopsticks.
- Power on your rice cooker. Add sesame oil to rice cooker and heat. Stir in chopped onion and stir until onion is slightly cooked. Add rice to rice cooker and stir. Add broccoli and vegetable stock. Stir well before securing lid on rice cooker. Follow your rice cooker manufacturerâs instructions for cooking times.
- When rice is almost finished cooking, scramble two eggs and cook as you would an omelet. Finely chop the egg and mix into the rice mixture. Stir well.
- For the sauce, mix low sodium soy sauce, sesame oil, Sriracha, chopped garlic, chili paste, sugar and ginger. Whisk well until thoroughly blended.
- Serve rice mixture into bowls and spoon with sauce, about two large spoons full per bowl. Serve immediately.
