Goat cheese, pecans, and fresh greens with Spicy Maple Cider Vinaigrette are a seasonal delight in this Roasted Apple Salad.

- Preheat oven to 350 degrees. In a bowl, toss apple wedges in 2 teaspoons of oil and a pinch of salt. Place in a casserole dish or on a baking tray and bake for 30-35 minutes or until apples are soft.
- In the meantime, prepare the salad by combining kale, arugula, cheese, and pecans in a large bowl.
- In a small bowl or jar, combine the vinegar, olive oil, syrup, sriracha, mustard, salt and pepper and whisk or shake to emulsify.
- When apples are done cooking, allow to cool slightly for several minutes, then add to the salad, coat with dressing, and toss to combine. Serve immediately or refrigerate for an hour and serve cold.
