Roasted veggies are a holiday meal staple and this dish is no exception. With fresh herbs that impart the feast-like flavor of yuletide dinners, these roasted veggies are a perfect addition to the bountiful spread, not to mention easy to prepare.
- Preheat the oven to 400 degrees and cut the carrots and celery root into similarly sized pieces and slice the onion. Toss the vegetables in a baking dish or casserole pan with olive oil, thyme, and salt until well coated then place in the oven for 40 minutes, rotating and stirring vegetables at least once halfway through cooking.
- In the meantime, toast crushed walnuts in a dry pan on medium heat for a few minutes or until golden brown, stirring frequently to prevent burning.
- When vegetables are tender, remove from oven and top with walnuts and more fresh thyme before serving.
