- Preheat the oven to 400 degrees and cut the carrots and celery root into similarly sized pieces and slice the onion. Toss the vegetables in a baking dish or casserole pan with olive oil, thyme, and salt until well coated then place in the oven for 40 minutes, rotating and stirring vegetables at least once halfway through cooking.
- In the meantime, toast crushed walnuts in a dry pan on medium heat for a few minutes or until golden brown, stirring frequently to prevent burning.
- When vegetables are tender, remove from oven and top with walnuts and more fresh thyme before serving.
