Green beans are a holiday meal staple in many households, but instead of a casserole, this recipe for Roasted Green Beans adds a lighter side dish to the dinner table and goes perfectly with some of the heartier items you may be serving. - Preheat the oven to 400°F. Toss the green beans with the olive oil, kosher salt, black pepper and lemon juice until evenly coated.
- Spread the green beans onto a rimmed baking sheet and roast in the oven for 15 minutes, or until tender and beginning to brown at the edges.
- While the green beans cook, melt the butter in a small skillet over medium heat. Add the crackers and cook, stirring occasionally, until lightly toasted, about 5 minutes. Remove from the heat and stir in the lemon zest.
- Transfer the green beans to a serving dish and sprinkle generously with the toasted cracker crumbs. Serve immediately.
