Roasted Radishes with Thyme

A low-carb alternative to roasted potatoes.

Directions

  1. Adjust oven rack to middle position and preheat oven to 450 degrees.
  2. Toss radishes with oil, thyme, salt and pepper and place on a lined baking sheet. Bake for 20 minutes, or until radishes begin to get crinkly and brown.
