Roasted Red Pepper and Chicken Wrap

Wrap up chicken breast, roasted red peppers, hummus, lettuce and tomatoes in flour tortillas for a great on-the-go meal that has received 2 stars from Guiding Stars.


Select ingredients:


  1. Prepare a small nonstick frying pan by spraying it with cooking spray. Sauté the chicken in the frying pan over medium-high heat until the chicken is lightly cooked throughout. Remove from heat and place to the side.
  2. Turn on the broiler. Line a baking sheet with aluminum foil. Place the pepper on the prepared baking sheet and broil, flipping often until the skin blackens all over. Remove the pepper from heat and place in a covered bowl. Allow it to steam for about 10 minutes, or until the skin loosens. Peel, remove seeds and slice.
  3. Spread 1 tablespoon of the hummus on each warmed tortilla. Top each tortilla with half of the chicken, lettuce, tomatoes and roasted pepper. Fold in the sides and the bottom of the tortilla and then roll to close.
