Roasted Redskin Potatoes and Onions

  1. In a large baking dish, place the potatoes, onion, salt, and pepper.
  2. Chop the butter into pieces and add to the baking dish.
  3. Bake in a 400-degree oven for approximately 45 minutes or until the potatoes are tender. (Stir after the first 10 minutes to coat all the ingredients with butter; then stir and periodically throughout the cooking process.)
  4. Remove from the oven; sprinkle with parsley.
