Roasted Root Vegetables

Root vegetables are loaded with healthy carbohydrates that you need to work out and recover and also help reduce your risk of cancer! This side dish is all the more reason to prepare this quick veggie plate for your family!



  1. Peel the potatoes using a peeler or a sharp knife.
  2. Chop the butter and place it on top of the vegetables, or pre-melt the butter and drizzle over them.
  3. Season with salt and pepper (don’t be shy with the pepper) and herbs of choice.
  4. Place in a 425-degree oven. After two or three minutes, the butter will be melted, so thoroughly stir the vegetables to coat them with butter. Continue to check on them a few times during the cooking process and stir to ensure that the vegetables are evenly coated with the butter and seasoning.
  5. Cook until the vegetables are tender, usually 45 to 60 minutes.
  6. Feel free to substitute or add other root vegetables such as carrots, parsnips, or turnips.
