Roasted Cabbage

  1. Cut fresh cabbage into ½-inch-thick rounds.
  2. Brush baking sheet with 1 tablespoon olive oil or cooking spray.
  3. In a bowl, combine olive oil, balsamic vinegar and honey.
  4. Arrange the cabbage slices in a single layer and brush with the honey balsamic vinaigrette. Season with salt and pepper.
  5. Roast at 400°F until cabbage slices are tender and edges are golden (25 to 30 minutes).
