Rotisserie Chicken Enchiladas

  1. Preheat the oven to 400°F. Mix the chicken, 8oz of salsa verde, 1 cup of cheddar and onion together in a large bowl until combined.
  2. Cover the bottom of a 9x13 inch baking dish with 4oz of the verde Mexican salsa. Spoon the chicken mixture down the center of each tortilla. Roll up each tortilla and place into the prepared baking dish, seam-side down, nestling each one against the last. Pour the remaining verde Mexican salsa over the top of the rolled tortillas. Sprinkle with the remaining cheddar.
  3. Bake until the cheese is melted and bubbly, about 10-15 minutes.
  4. Cook beans in a small saucepan over medium-low heat until fully heated through. Keep hot until ready to use.
  5. Top with a few dollops of the sour cream, black olives and cilantro. Serve with rice and beans and enjoy.

Recipe Tip: Feel free to substitute flour tortillas for the corn tortillas!
