- Combine the rice, water, salt, and saffron in a rice cooker. Cook according to appliance instructions until the liquid is absorbed.
- While the rice cooks, whisk together the vinaigrette ingredients in a small bowl.
- Transfer the cooked rice to a medium bowl. Add the vinaigrette while the rice is still warm. Gently stir in the remaining ingredients, except the garnish. Taste and adjust the seasoning.
- Serve at room temperature or chilled. Garnish with mint sprigs.
