Serve this aromatic dish as an accompaniment to meat, fish, and chicken. Be sure to use long-grain rice to ensure that it will cook up fluffy rather than sticky. The spice saffron is the stigma of a small purple crocus. A little goes a long way, and there is no substitute for its exquisite flavor and earthy aroma. Be sure to purchase whole saffron threads rather than powdered saffron. Store in an airtight container in a cool, dark place.


Select ingredients:


  1. Combine the rice, water, salt, and saffron in a rice cooker. Cook according to appliance instructions until the liquid is absorbed.
  2. While the rice cooks, whisk together the vinaigrette ingredients in a small bowl.
  3. Transfer the cooked rice to a medium bowl. Add the vinaigrette while the rice is still warm. Gently stir in the remaining ingredients, except the garnish. Taste and adjust the seasoning.
  4. Serve at room temperature or chilled. Garnish with mint sprigs.
