- Cook bacon slices in a large skillet over medium heat until crispy. Remove and drain on paper towel-lined plates.
- Rub salt and pepper over salmon filets. Place salmon in skillet, and cook over medium heat until fully cooked, about 5 minutes per side.
- In a small bowl, whisk together mayonnaise, dijon mustard, remaining pinches of salt and pepper, and lemon juice.
- Assemble sandwiches by spreading 1/4 mayonnaise mixture onto one side of each roll, then top with 2 lettuce leaves, 1 tomato slice, salmon, and 2 bacon pieces.
