Makes a healthy brunch, lunch, or dinner. They're also delicious cold as a paper bag lunch.

  1. 1. Adjust oven rack to middle position and preheat to 350 degrees. Line a sheet tray with foil, then season the salmon with salt and pepper. Place salmon on lined sheet tray and place in the oven for 15 minutes, or until salmon is fully cooked. Remove from oven and allow to cool, then flake into small pieces using a fork.
  2. 2. In a large skillet melt the butter, and when melted add the zucchini and garlic and cook until the zucchini releases water and is fully softened. Place softened zucchini in a strainer and let drain for 10 minutes.
