Stir milk, cream, cinnamon, vanilla, and nutmeg in a large saucepan. Bring to a boil over medium heat. When it bubbles, remove from heat. Set mixture aside and steep 10-15 minutes.
Beat together eggs and sugar in a stand mixer on high. Add egg mixture to milk mixture and whisk together quickly. Stir in caramel, salt, and rum. Whisk to combine. Chill in refrigerator 1 hour or longer.
Pour chilled eggnog into glasses. Top with fluffy egg whites. (Beat 2 egg whites + 1 teaspoon sugar on high until foamy peaks form.) Top with grated nutmeg. Drizzle with caramel sauce. Toss in a cinnamon stick for added flair.
