Fresh herbs are the star of this quick supper, adding a dash of color and loads of delicious flavor. Mint and parsley give this bowl and exotic feel, but feel free to experiment with whatever fresh herbs are on hand and create your own favorite!
- Cook quinoa according to package directions.
- In a skillet over medium heat, thoroughly cook sausage links, turning once after about 5 minutes.
- Once cooked, remove sausage links from skillet and add green beans. Cook beans until crisp-tender, about 5-8 minutes.
- In a large bowl, combine quinoa, herbs, oil, salt and pepper and mix well. Top with a sausage link and 1/4 green beans. Serve immediately.
