Tacos take a savory turn in this Mexi-American collaboration. Pork sausage is rich and savory, while spinach and crisp red peppers add color and crunch. Plus, everyone in the family can customize their tacos so even picky eaters won't leave the table hungry.

  1. In a large skillet, cook sausage thoroughly, stirring often to crumble.
  2. In a separate skillet, saute spinach and peppers with chili powder until peppers are crisp-tender, about 3 minutes. Set aside.
  3. Warm tortillas in a small pan coated with cooking spray for 1 minute per side.
  4. Evenly divide cooked sausage among prepared tortillas, topped with spinach and peppers. Finish with shredded cheddar, and salsa or sour cream if desired.
