- In a large skillet, cook sausage thoroughly, stirring often to crumble.
- In a separate skillet, saute spinach and peppers with chili powder until peppers are crisp-tender, about 3 minutes. Set aside.

- Evenly divide cooked sausage among prepared tortillas, topped with spinach and peppers. Finish with shredded cheddar, and salsa or sour cream if desired.
