This sausage and vegetable dish is made in just 30 minutes and for under $10 that packs a whole lot of flavor with sausage, red potatoes, corn, spinach, onion and peppers.

  1. In a 12-inch cast iron skillet, heat the oil and butter over medium heat. Saute the onion and pepper until soft. Add the sausage pieces and cook for a few minutes. Use a wooden spoon to stir everything.
  2. Add the potatoes, corn, and broth. Bring to a boil. Reduce the heat and cook, covered for about 10-15 minutes, until the sauce is thickened slightly and the potatoes are soft. Serve immediately.
