- Preheat the oven to 350°F and coat a baking dish with nonstick cooking spray. Brown sausage in a large skillet over medium heat. When sausage is cooked add scallions, green bell pepper and red bell pepper. Sauté for 5-7 minutes or until vegetables begin to soften. Remove from heat and transfer to a large bowl.
- Add hash browns, cream of mushroom soup, and 1 cup of cheddar cheese. Mix until thoroughly combined. Fold in cream cheese and transfer to the prepared baking dish. Top with shredded cheese and crushed cornflakes. Bake for 30 minutes or until hot and golden brown on top.
- Serve with sour cream and salsa and garnish with sliced scallions.
Recipe Tip: For a spicier casserole add chopped jalapenos to the scallions and bell peppers.
