Sausage Ragu with Gnocchi

A date night version of the classic spaghetti with tomato sauce

Ingredients

  1. Place a large saucepan over medium high heat and fry the sausage, breaking it up as it cooks. Once the sausage has browned and cooked through, about 8 minutes, use a slotted spoon to remove it from the pan then place the pan back over the heat and add onion, garlic and thyme and cook until fragrant, about 4 minutes.
  2. Add the sausage back to the pan, then add crushed tomatoes. Bring to a simmer and cook for 45 minutes. Season to taste with salt and pepper.
  3. Cook the gnocchi according to package directions, then drain. Toss the gnocchi with the sauce and serve with grated parmesan served alongside.
