- Place a large saucepan over medium high heat and fry the sausage, breaking it up as it cooks. Once the sausage has browned and cooked through, about 8 minutes, use a slotted spoon to remove it from the pan then place the pan back over the heat and add onion, garlic and thyme and cook until fragrant, about 4 minutes.
- Add the sausage back to the pan, then add crushed tomatoes. Bring to a simmer and cook for 45 minutes. Season to taste with salt and pepper.
- Cook the gnocchi according to package directions, then drain. Toss the gnocchi with the sauce and serve with grated parmesan served alongside.
