- Bring a large pot of water to a boil. Add the sweet potatoes and cook for 15 minutes or until tender. Drain the potatoes and return to the pot.
- Add the butter to the potatoes and mash until melted. Add the sour cream, garlic, parsley, thyme, salt and pepper and mix to combine. Transfer to a bowl for serving.
Recipe Tip: For a creamier texture and sweeter flavor, select red- and orange-skinned sweet potatoes.
