As intimidating as Thai food can seem, there are a few dishes that require nothing more than a pan and some spices that once you try them, you'll love. The best thing about this Thai soup recipe is it makes a nice base for all sorts of other broth-based spicy Thai meals. Switch out the proteins and remove the peanut butter and it's easy to make this soup unique every time you prepare it. To stretch your food dollar, serve it over Uncle Ben's brown rice in the microwave packet for a heartier meal.
- Chop prepared protein (if shrimp, leave whole), place protein and snow peas in bowl, set aside.
- Heat oil in large pan on medium heat. Add turmeric and stir until blended. Add sliced onion, cardamom, coriander, red curry paste, Sriracha and sugar. Stir in coconut milk and peanut butter until all ingredients are well blended and add most of the cilantro and lime juice.
- Reduce heat and let simmer, about 2 minutes. Add cooked protein and veg and stir until protein is hot. Pour into bowl and garnish with peanuts, remainder of chopped cilantro, bean sprouts, sesame seeds and diced green onion.
