Corn can be made so many different ways, but this baked scalloped corn recipe stands out above them all. Top with buttery crushed crackers for a crunch!
- Preheat oven to 350 degrees. In a bowl, whisk the egg, coconut milk, and cheese together. Then add in corn, salt & pepper. Stir until all corn is coated.
- Grease a 9" cast iron skillet or similar size casserole dish with butter (or oil) & transfer the corn mixture into it. Bake for 35 minutes, then remove from the oven. Top with crackers and put back in the oven to bake for an additional 15 minutes.
- Remove from the oven and let it cool slightly. Enjoy!
