- Cook rice according to package directions.
- In a large bowl, combine shrimp, soy sauce, sesame seeds and scallions, tossing to combine.
- Heat olive oil in a large skillet over medium heat. Once hot, add snow peas and cook until crisp-tender, about 5 minutes. Add shrimp mixture to pan and cook, stirring frequently, until shrimp are bright pink, about 5 minutes.
- Toss hot rice with chopped garlic. Serve shrimp and snow pea stir-fry immediately over 1/2 cup brown rice and garlic.
