- In a small bowl, mix together the mashed avocado, the salt, the pepper, and the garlic powder.
- Use a shamrock cookie cutter to cut out a shamrock shape from the center of your bread slices.
- In a buttered skillet, place the bread slices (the ones with the shamrock-shaped centers) and crack an egg into each hole. Cook for 3 or 4 minutes until the egg is set, then flip it to cook the other side for about 30 seconds.
- Remove them from the pan. Place the 3 small shamrock-shaped pieces of bread in the skillet and cook on both sides until lightly toasted. Remove from the skillet and top with the avocado spread.
- Serve with cilantro if desired. Enjoy!
