  1. In a small bowl, mix together the mashed avocado, the salt, the pepper, and the garlic powder.
  2. Use a shamrock cookie cutter to cut out a shamrock shape from the center of your bread slices.
  3. In a buttered skillet, place the bread slices (the ones with the shamrock-shaped centers) and crack an egg into each hole. Cook for 3 or 4 minutes until the egg is set, then flip it to cook the other side for about 30 seconds.
  4. Remove them from the pan. Place the 3 small shamrock-shaped pieces of bread in the skillet and cook on both sides until lightly toasted. Remove from the skillet and top with the avocado spread.
  5. Serve with cilantro if desired. Enjoy!
