- Heat 2 teaspoons sesame oil in a large skillet. When it starts to shimmer, add in shaved Brussels sprouts and shallots and saute for 3 minutes. Add in the garlic, ginger and soy sauce and saute for another two minutes or until vegetables are soft. Transfer the contents of the pan to a bowl.
- Prepare the potstickers by placing 1-2 teaspoons of the Brussels sprout mixture into the center of each wonton wrapper. Liberally moisten the edges of the wrappers with fresh water, then fold the corners toward the middle and press them together carefully, forming a sealed basket.
- When all wrappers have been filled, steam in a steamer basket or tray (according to manufacturers instructions) for 2-4 minutes or until wonton wrappers are soft and translucent. Alternatively, coat the bottom of a large pan or skillet with a lid with sesame oil and arrange wontons so they are evenly spaced. Cook uncovered for 1 minute, then add enough water to cover the bottom of the pan and secure the lid to steam wontons for 2 minutes. Cook in batches until all potstickers are steamed.
- Transfer the potstickers to a serving plate and top with sriracha, cilantro, and sesame seeds if desired and serve warm along with soy sauce or tamari for dipping.
