Sheet Pan Honey Balsamic Pork Tenderloin

Come in under budget and have dinner on the table in 40 minutes? This workhorse recipe does all of that while keeping price at a minimum. Affordable pork tenderloins get a budget-friendly, sweet-and-tangy marinade and are roasted with seasonal veggies on a sheet pan for a cost-conscious supper that’s sure to please the whole family.

- Place the pork in a resealable plastic bag. Add 1 tablespoon of olive oil, honey, vinegar, rosemary, garlic and 1 teaspoon salt. Massage the mixture into the pork to cover completely. Marinate at room temperature for 30 minutes or refrigerate for several hours or overnight.
- Preheat the oven to 425°F and line a rimmed baking sheet with aluminum foil. Place the potatoes and carrots in an even layer onto the prepared baking sheet. Drizzle with the remaining olive oil. Season with the remaining salt. Brush the excess marinade off the pork with paper towels. Place the pork on top of the vegetables.
- Bake for 15-20 minutes until the vegetables are tender and the pork is golden brown, and reaches an internal temperature of 145°F.
- Allow the pork to rest for 15 minutes before slicing. Garnish with the parsley and serve.
Recipe Tip: Use the leftover meat to make pork sandwiches with provolone!
