- Preheat the oven to 400°F.
- Whisk together oil, lemon juice, garlic, oregano, thyme, salt and pepper in a large bowl. Add the chicken and toss to coat evenly.
- Arrange the zucchini, pepper, tomatoes and onion in a single layer on a baking sheet. Top with the chicken and pour the marinade over the vegetables.
- Bake for 30-35 minutes or until the chicken reaches an internal temperature of 165°F. Sprinkle with the crumbled feta.
